
For a Tampa wedding that we catered this past weekend, the bride challenged us to create a unique appetizer that was interesting, fun and also matched her colors of pink and brown. Since brown doesn’t necessarily scream “appetizing” and “cool” on a hot June afternoon, we settled on something pink. Watermelon is a great summer fruit in Florida and these would be hors d’oeuvres passed during cocktail hour, so we decided to serve watermelon gazpacho shooters.

Watermelon Gazpacho Shooters

Here’s a quick and easy summer soup that you can serve as an appetizer before dinner or as a party pleasing hors d’oeuvre.
Makes about 30-40 one ounce servings; serve in 1.5 ounce in shot glasses
Ingredients
¼ large seedless watermelon, cubed
1 cucumber, diced fine (scoop out seeds from middle)
1 ripe red tomato, chopped
1-2 oz. (approx) Red Wine Vinegar
Black Pepper, Salt, Cayenne Pepper, to taste
Method
Reserve a third of the diced cucumber and put remaining ingredients in a mixing bowl and blend until smooth, using a stick blender.
The watermelon and cucumber combined will make this a sweet soup. In order to balance the flavors, season to taste with black pepper and cayenne and add acidity using red wine vinegar.
This soup is best made the day before the event so flavors will meld.
Pour into shot glasses and garnish with diced cucumber.
