When it came time for a national community developer to select a caterer and production team for their annual VIP rewards reception, they knew where to go in Tampa Bay. This year’s theme of “Old World Florida – Rustic and Refined,” featured great food and cutting edge decor that showcased the flavor and feel of the South Florida region.
The gala was held at The Palmetto Club, at Fishhawk Ranch in Lithia, FL and boasted a guest list of more than 200 local realtors and VIP’s that basked in the beautiful custom designed decor and lighting by MMD Events, enjoyed specialty cocktails by uDream Events and feasted on delicious passed hors D’ouvres and innovative food stations from Good Food Catering Company.
Producing high profile events is our specialty and we take pride in working side by side with other event companies. Whether it is a corporate VIP tailgate party for 20 or a gala event for 400, Good Food Catering Company brings out the innovation and teamwork necessary to pull it off in style. In addition to our in-town vendor partners, we worked with Lisa Teiger of CuisinEtc Catering in New York City as a menu consultant and even had a guest chef for the evening – Chef Tom Morelli from Chicago, IL.
Here is a sneak peak of some of the event photos:
Floribbean Short Plate Stations – “Rustic and Refined”
These fun and fabulous stations are designed to be independent food stations
allowing your guests to pick and choose the items that they will enjoy.
Station décor includes food being served from cast-iron skillets set atop brick “chimneys”
South Florida “Black Beans and Rice Martini Bar”
A classy twist on a rustic South Florida influenced dish – Cuban black beans and rice.
To keep the crowd flowing smoothly
your guests will be served the black beans and rice “martinis”
by one uniformed staffer, and then move to another section of the station
where a second staffer will dish out your guest’s choices of toppings, including
chopped mojo chicken, pulled Cuban roast pork,
scallions, red peppers and balsamic caramelized onions.
Key Lime Caesar Salad with Margarita-marinated Grilled Shrimp
A Florida twist on a classic salad! Elegantly served in a cocktail glass, romaine lettuce is tossed lightly with our house-made creamy key lime caesar dressing and then topped with margarita marinated grilled Florida pink shrimp. Served on a vertical buffet display for a unique and modern look.
Citrus Grove Chicken Short Plate
refreshing Florida citrus marinated grilled chicken breast,
sliced and topped with a orange-grapefruit salsa,
served over island style slaw atop a tropical banana leaf.
Light and refreshing with a feel of Florida.
“Southern Style” Shrimp and Grits
plump Florida pink shrimp sautéed in a rich, spicy cream white wine sauce with onions and peppers, served over creamy cheddar cheese grits
Signature Appetizer Bites (passed throughout the event)
Mini Crispy Fish Tacos
With citrus marinated grilled tilapia, crunchy jicama slaw & pico de gallo
Fried Mac-N-Cheese Lollipops
Comfort food meets class
Fried alligator on a mini knotted bamboo skewer, with a Creole Remoulade sauce
Gourmet “Cheeseburgers in Paradise”
Miniature sliders of sirloin, caramelized onions, melted pepperjack cheese and a piquant scotchbonnet pepper aioli

Wedding Catering at the Palmetto Club – Amanda and Chip (click for photos)
Posted on July 1st, 2009 - 1 Comment
A couple of weeks ago we had the pleasure of catering a wedding at the Palmetto Club at Fish Hawk Ranch for Amanda and Chip. They had visited with several other catering companies in town and had almost booked one before we were introduced by Staci from Unique Event Design. Since they were lovers of good food and wanted something unique, we were a perfect fit to cater their wedding.
Of course the menu included our famous Fried Mac-N-Cheese Lollipops as a cocktail hour appetizer, but Amanda also challenged us to create a fun and cool summertime appetizer that was also pink! This led us to the creation of the Watermelon Gazpacho Shooters. Last, Sweet Thai Chili Shrimp were passed on Asian soup spoons while a pink wedding punch was served in hurricane glasses.
The buffet style menu included our signature Tuscan Chicken with Cannelini Bean Salad and Penne Pasta Primavera, with fresh summer vegetables in a light roasted pepper cream, all served from our elegant hand hammered copper chafers and pealla pan.
To finish up the evening, guests accompanied their wedding cake at our coffee station, complete with beautiful copper coffee urns, which can be seen in the photos below.
Although I was very pleased at the job we did for Amanda and Chip, I had a smile on my face for a week after a glowing review posted on WeddingWire.com. Reviews like this are the reason that I love weddings and I love catering:
Of course pulling off a successful event is a team effort, so thank you to everyone involved, especially Abe and Jenny Borje for use of their fantastic photography!
